Located at the Palm Beach Marriott Singer Island Beach Resort & Spa, 3800 Ocean’s culinary team brings eclectic menu items to the shores of Palm Beach with its new collaborative kitchen concept. Under the direction of Larry LaValley, assistant general manager - and former executive chef under acclaimed celebrity chef Mark Militello - 3800 Ocean will offer a unique approach to dining with a collective menu that is produced by the entire culinary staff, highlighting chef specialties and culture.
The culinary team at 3800 Ocean is inspired by sustainable practices and sources local ingredients where possible. Highlighted signature dishes are created with fresh-from-the-ocean seafood including scallops harvested by personalized scallop divers, ingredients from Swank Specialty Produce’s hydroponic farm and poultry from Murray’s family-farmed and naturally raised chickens.
Dinner entrées on the co-inspired menu include items such as Southern Comfort BBQ Glazed Baby Back Ribs apple, raisin celery root slaw, crisp onion rings; Sautéed Chicken and Fettuccine Parmesan pancetta, oven-dried tomatoes, spinach; Pan Roasted Natural Murray’s Chicken Breast and Confit of Leg roasted root vegetables, caramelized onion mashed Yukon Gold potatoes; “Mojo” Marinated Grilled Pork Tenderloin smashed sweet plantain, roasted corn sauce, smoked ham-bean salad and Ingrid’s New England Day Boat Scallops wild mushrooms, swank farm greens, sweet onions, lobster nage, truffle bubbles. Nightly specials will feature 3800 Ocean’s “Chef of the Day” and will be paired with biographical information on the chef du jour.
