Auntie Dalie was a one of a kind original. She was a second generation Italian American who was the hardest working woman I ever knew. She took pride in everything she did and wanted us to do the same.
As little girls, my sisters and I would go to Auntie Dalie's, help her take out that piece of plywood behind the match lit gas stove and we would begin to roll out the dough for cappellettis. Drinking our "Coffee Milk" and listening to her tell us, "don't tell your mother", we would make hundreds for family gatherings. She taught us all, life is not a handout, work hard at everything you do and if can do that, you'll feel pride in just doing the best job you can.
Auntie Dalie's was founded with her approach to life in mind. Our pasta is all original with nothing extra added or needed to make it good. We use traditional pasta making methods along with natural air drying just like they used and still use to this day in some parts of Italy .
