Confessions of a Foodie began in 2007 as a showcase for some of my family’s favorite Mexican and Italian recipes as well as recipes and techniques that I taught myself along the way.
A recovered - yes! I reversed it! - diabetic, these days, I'm remaking my favorite dishes using wholesome ingredients eschewing packaged foods whenever possible. The disease was an eye opener so now I’m forging a new culinary identity by embracing organic, free-range, grass fed, locally grown pantry items.
Not following any one particular diet, I strive for balance enjoying real, whole foods cooked from scratch. From clean-eating to lower carb, lower glycemic, and from paleo and lightened up versions of my childhood favorites to vegetarian and vegan recipes – there’s plenty to choose from here at Confessions of a Foodie.
And because life is a little sweeter with the occasional treat, you’ll also find recipes for sugar-free, reduced sugar and every once in a while, an all out sinfully delicious dessert or occasional “cheat” meal.
