Brunch begins with a luxurious Seafood, Sushi & Sashimi Platter which includes fresh oysters, clams, prawn cocktail with wasabi sauce and Chef’s selection of sushi rolls and sashimi, along with a Create your own salad option to add balance within brunch. Guests can choose one of the homemade sauces to dress their salad, which will change with the seasons and for spring; a zesty yuzu, coriander & jalapeño and a rich, nutty sesame dressing.
Brunch traditionalists will also love the new Eggs Benedict, a power tower of brioche, lightly buttered and toasted in the oven and a choice of Prosciutto ham or Smoked Salmon, baby spinach garnished with a homemade hollandaise sauce.
Brunch can be paired with continuous pours of Veuve Clicquot (+$298), Veuve Clicquot Rosé (+$398) or Dom Pérignon (+$1,988) and included within these champagne packages are three new free-flow cocktails:
• The Sour Cherry Margarita shaken with Tequila blanco, zesty lime, cherry purée, Cointreau and cracked black pepper
• White Sangria with St Germain elderflower, sauvignon blanc, natural honey and a mixture of lime, blueberries and raspberries
• While the gin-based Juniper Rose Punch blends refreshing grapefruit juice, elderflower liqueur, rose water and rhubarb bitters to whet your appetite.
