What is a Liege Waffle? A Liege waffle (lee-ehj) is a dough based, yeast-risen waffle, full of buttery goodness. The dough is more brioche like and not from a batter. It is mixed with pearl sugar that caramelizes on the outside of the waffle when cooked. It's denser and chewier than our standard waffles, and yet its velvety soft inside from the yeast. These ain't yo mama's waffles. And with the Burgundian, Rhode Island's first Liege Waffle company, you can rest assure you're getting the most authentic version available. We will have a fun menu, including a Friday the 13th themed liege waffle, and we will be introducing the "Gaufre Monsieur", our take on France's popular "Croque Monsieur", topped with a cool dijon sauce, delicious ham, and melty French cheese. The rest of the menu to be posted soon.
