Chef Brian Polcyn's 2 day Charcuterie and whole-hog butchery course features a demonstration of European seam butchery vs. USDA cuts, pate, terrine, and sausage making, proper smoking and dry curing techniques, and the importance of using heritage breed hogs and supporting the farmers that raise them. This course is intensive and appropriate for those looking for a foundational knowledge on Charcuterie or to gain a more advanced perspective, Chef Brian's 35+ years of practicing Charcuterie and 20+ years as a college professor allow him to appeal to all levels of knowledge.
