American Airlines Presents First Class Pairings: Wine of the Pacific Northwest...
The Pacific Northwest presents us with familiar varietals, but in a unique and new style! Join us as we visit familiar varietals farmed and vinified by exciting wineries in the region. A representative from the region will lead your dinner with a brief history of the areas, varietals, and wineries featured.
First, we will explore Oregon and their famous winemaking regions. Venturing north of California, we commonly think of Oregon as Pinot Noir country; but here we will sample their delicious take on Pinot Gris as well. Moving to Washington, we will focus primarily on their red wines. Smooth, flavorful, and full of quality, these wines will pair perfectly with a dinner prepared and paired by our Beverage Director, Vanessa Phillips, and our Executive Chef.
Archery Summit Vireton Pinot Gris, Willamette Valley, 2016
Golden yellow in the glass, this wine is effusive, with a fresh and vivid palate. The bouquet is full of enticing aromas of ripe green papaya, lime, freesia blossom and kiwi, while the palate exhibits a lively, bright mouthfeel with subtle flint and brackish notes and a lengthy finish.

Seven Hills Dry Rose, 2017
In the tradition of the classic French rosés, ours is delicate and refreshing, pale in color, and bone-dry. Primarily Cabernet Franc, with small amounts of Petit Verdot for additional structure and Malbec for expressive fruitfulness, this wine exhibits flavors of peach, grapefruit, and papaya along with fresh herbs and minerality.
Rohan Duck Breast
sweet potato puree / roasted pearl onion / blackberry gastrique
Archery Summit Dundee Hills Pinot Noir, 2015
captivates the nose with aromas of dried orange peel, mountain blueberry, rose petal, star anise and black tea. The dense, succulent palate of thimble berry is spiced with cinnamon graham cracker, cardamom and hints of Tahitian vanilla bean. The velvety finish is focused with balanced acidity, offering notes of savory baking spice and demi glaze as it lingers and evolves.
braising greens / toasted pecans / dark chocolate jus
Seven Hills Vineyard Cabernet Sauvignon, 2014
The palate is plush and mouth-filling yet framed with silky, fine-grained tannins and lifting acidity. It has flavors of black cherry, cassis, coffee bean, herb, tobacco leaf and spice.
New York Cheesecake

Double Canyon Horse Heaven Hills Cabernet Sauvignon, 2015
The soft and supple mouthfeel is supported by sweet oak tannins and fresh fruit character, finishing with a juicy acidity. This Cabernet embodies an enticing array of ripe red fruit, intermixed with notes of graham cracker, allspice and dried tobacco.
