Emilia-Romagna, in Northern Italy, is affectionately known as the legendary “bread basket” of Italy! The cuisine is simple, yet full of strong and refined flavors. Emilia-Romagna is an excellent source for many of the vital, staple ingredients that Italian cuisine is known for: Prosciutto di Parma, Balsamic Vinegar, Parmigianno-Regiano (Parmesan cheese), and an enormous variety of fresh, hand-made, stuffed pastas. Tastings of Aged Parmigiano Reggiano and Balsamic Vinegar; Piadina (Italian flat bread) with Homemade Ricotta, Prosciutto and Arugula; Tortellini in Brodo; Wild Boar Bolognese over Polenta; Torta di Riso (rice and custard torta)
