Seedstock (Denver, CO) + Diebolt
Smoked Rum Raisin Kolsch - 5%
We brewed a very clean, smooth Kolsch with just a hit of smoked malt, then added 10 lbs of Golden Raisins smoked on peachwood and soaked in rum. While the beer maintained its clean smooth character the smoke is evident and tasty.
Invictus (Blaine, MN) + Diebolt
Wine Not - Chardonnay Saison - 10.5%
This collaboration has been a few years in the making as the head brewers from both companies have been friends for quite awhile but haven’t, until recently, had the opportunity to brew together. Simple saison grain bill of 80% Pilsner and 20% flaked wheat, then we hopped the wort with 10 IBU of Calypso hops at Knock Out. Three days into primary fermentation we added 13 gallons of Chardonnay Must which accounts for 40% of the total fermentable sugar in this beer.
