Greeting Wine- Gerard Bertrand Cremant de Limoux Rosé
First Course- Charcuterie Board
Terrell Creek Farm's The Dude, Tomme, Edgewood Aged Cheddar, Providence Farms duck rillette and Krakow. This is will be paired with Rene Leclerc Bourgogne Rouge.
Second Course- Poached Black Bass
Forbidden rice, mimosa-glazed carrots, fried goat cheese, and pickled shallots. Paired with Reverdy Sancerre.
Third Course- Smoked Elk Chop
Sous vide with thyme, rosemary, and venta del baron, served with fried oyster mushrooms, fondant potato, and arugula-mint pistou with lime. Paired with Jaboulet Vacqueyras.
Fourth Course- Souffle
Askinosie dark chocolate with macerated blackberries and Missouri Spirits bourbon ice cream with candied walnuts. Paired with Gerard Bertrand Tautavel.
