Treat your tastebuds to a 6-course vegetarian menu that celebrates sustainability and local artisans. Through his brainchild Chefs of Yoga, Paolo Arlotta promotes healthy living and mindful eating among people who work in the high-pressure hospitality industry. At this dinner, he'll bring his expertise to the table and present a feast everyone can enjoy. Drawing on his Italian background and experience in some of Melbourne's top restaurants (Vue du Monde, Amaru, Tipo00), Paolo will create a menu of vegetarian delights. Sample local wines and fine dining while playing your part in the future of sustainable food.

Paolo has been working with Private Dining Room over the past two years of the project, showcasing his passion for vegetarian cuisine with techniques learned working at some of Melbourne’s best restaurants – Vue du Monde, Tipo00, Amaru and Nora. Further abroad, Paolo has worked at Michelin Starred restaurants Noma and Joia, as well as running different popup series such as Speak as You Eat and COY (Chefs of Yoga). Paolo’s focus is on showcasing vegetables in balanced dishes exploding with flavour and colour.
