Chef Cathy Whims and team proudly announce the return of Dario Cecchini to Nostrana. Dario is the world-renowned butcher of Panzano, located in the heart of Tuscany. He is an excellent cook, a master of hospitality and always the entertainer.
Dario returns to us after an appearance at the Maialata, our annual Festival of the Pig at Montinore Estate. Our in-house butcher (or macellaio) Rob Roy studied with Dario in Panzano last spring and not only secured Dario's return, but has also brought back learned technique and the spirit of Dario's restaurants in Chianti to Nostrana.
We're pulling out all the stops to put forth a celebratory menu with three spectacular wood-grilled steaks as centerpieces: Costata alla Fiorentina — a bone-in ribeye, Bistecca alla Fiorentina — the essential Tuscan porterhouse, and Bistecca alla Panzanese — Dario's signature cut.
Alas, it wouldn't be a Nostrana dinner without something exceptional in glass. Wine pairings will feature the renowned Barolo wines of Cavallotto, pairing the best of the Piedmont to the best of Tuscany.
