Our main course is accompanied by two distinct California Cabernets that blend nicely with the buttery flavors of the dish as a whole: the Napa and the Rutherford. The Napa is a juicier, rounder Cabernet that complements the sizzling filet without being overpowering. The Rutherford Cabernet, however, is known for its “dusty” quality, AVA produces Cabernets
with dry, firm tannins that pair well with the charred flavors of the onion jam and cauliflower.
