Benjamin Manea discusses his 10 year foray into non-traditional artisan baking, which began when he established Walla Artisan Bakery & Cafe in Penticton in 2007, with a focus on long-fermentation breads, artisan baking and 'from-scratch' cooking. He brings a technical and scientific background to the art of bread-making, and has frequently lectured about how bread and food can contribute to good health and a good life.
