Carlos Salgado opened Taco Maria in 2013, serving Alta-California fare that blends the traditions of his family with his training in Michelin-starred kitchens. He was named a Food & Wine Best New Chef in 2015, and his Costa Mesa restaurant is always near the top of Jonathan Gold's 101 Best Restaurants list. His co-host, Gabriela Cámara, known for her Mexico City restaurants MeroToro and Contramar, opened Cala — a restaurant helping to redefine Mexican food in the Bay Area — in San Francisco in 2015. Salgado and Cámara will collaborate on a dinner "in praise of the tortilla," each contributing two courses to a four-course celebration of this foundation of Mexican cooking.
