ABOUT THE CHEF
Known as a Brazilian culinary ambassador, Chef Paulo Machado has participated in numerous international food-related events, including the ExpoBrasil in Eastern Africa at Nairobi, Kenya, MISTURA and Amazonía Festival at Lima, Peru and the Food & Wine Festival in Punta Del Este, Uruguay. Also the I Brazilian Food Festival in Ethiopia, Bangkok and Kuwait. He has also worked in restaurants worldwide, in Argentina (Bar Uriarte – Buenos Aires), France (Season – Institut Paul Bocuse), Spain (Martin Berasategui – 3 star Michelin) and Brasil (Carême Bistrô – RJ; Empório Siriúba, Julia Gastronomia, Casa Europa – SP). Currently, the Chef teaches in several Universities in Brazil, and in 2009 opened Instituto Paulo Machado for food research, specialized in Brazilian gastronomy.
