Here at New Hat Baking, we’re elated to offer you the solution to healthy, nutritious, gluten free products that everyone enjoys eating. You may have known us before as Kokopelli Baking Company, but we've recently changed our name. Even though we're wearing a New Hat, we’re still your source for delicious, nutritious, and easy gluten free baking mixes.
For health conscious consumers, we create baking mixes with unmatched taste and texture by utilizing classic baking techniques. It’s also because we use sorghum – a genus of grasses, one of which is raised for grain and made into flour. We’re happy to say that we get ours fresh from our neighbors in Kansas. We use organic & non GMO ingredients for you, and also avoid all common food allergens. Hence, our mixes produce baked goods with superb texture and flavor.
My name is Amber Davis and I am the company's founder. I began my search for delicious gluten free products when my son was diagnosed with Asperger's Sydrome in 2007. The entire family experienced the positive benefits of being gluten free. However, store bought brands proved to be disappointing with little flavor, an unappealing texture and exorbitant costs. Then, I tried various gluten free recipes. Most were complicated and time consuming, requiring a lot of ingredients and too many steps in the baking process. After finally finding a flour blend that met my standards for taste and nutritional value, I began making the mixes in bulk for quick preparation. By adding my own flair to it, I realized I was on to something great and the New Hat Baking mixes were born. New Hat Baking is also fortunate to have Kari Rose, my mother, business partner and an expert baker for over 20 years at the helm.
