Pei Modern is an award-winning Sydney bistro by acclaimed Australian chef Mark Best, located in The Rocks near Circular Quay, within five-star Four Seasons Hotel Sydney.
Mark Best is joined by Head Chef Joachim Borenius (ex Heston Blumenthal’s The Fat Duck and Thomas Keller’s Per Se) to deliver a relaxed dining experience built on best-in-class, seasonal produce and a philosophy of eating well.
The team makes full use of the wood-fire oven and grill and open kitchen to create memorable dishes such as slow-cooked Milly Hill lamb shoulder, yellow miso, apricots and saltbush, and milk chocolate sorbet with orange jam and Anzac biscuit.
