A formal private Chef to the royal family of Persian Gulf, Chef Fawzi mastered his craft and achieved the level of saucier at the “Marriott Hotel Champ-Elysee” Paris, France. Since coming to Toronto, Chef Fawzi has continued to excel and succeed at a number of well-established fine dining restaurants. Including, “Centro Grill and Wine Bar” as saucier and contributing creative new development.
As well as “Peppino’s on the beach”, where as executive Chef, Fawzi’s menu rapidly elevated the bistro to one of the top ten restaurants in the city. His ongoing achievement at Opal Jazz Lounge has won him critical acclaim and a vast loyal following with the years of success and ventures and a high degree of business.
Alise Matos, Owner/Sommelier; brings equal talent and experience to Velouté.
With over 25 years of experience, Alise’s philosophy of service and professionalism has developed to a higher level of service excellence, meeting guests expectations and performance. Alise is a seasoned event planner who has dedicated extensive time and effort gaining superior knowledge through top restaurants such as Opal Jazz Lounge, The Fifth, Windsor Arms Hotel, Mistura. She is a CAPS member Canadian Association of Professional Sommelier.
